I have for some years now been giving this course to the students at Lund University of Technology (LTH) as an introduction to a Quality and Product Safety course over 8 weeks.
The course is intended as introduction for food safety professionals as well as for management that want to have an overview of the subject and understand how it's all connected.
The course takes about 2 hours to listen to and I will cover the following subjects:
Why - Obviously Food safety is mandatory, but also because it's very profitable, fun and rewarding
What - What is a Quality and Food Safety system and how does it work
How - What are the tools you use: HACCP, TACCP, VACCP, Hygiene, KPI's, Analysis, Root Cause, Statistics...
